Mimi’s Cherry Clafoutis

We had such a lovely dinner one night with Mom and Daddy over at our place, and this was our grand finale.

Does it get better than my mom’s photos?? I think not.

I learned something that day…I learned that cherries should probably be pitted prior to baking them into what is basically a ridiculously thick crepe, regardless of how much the author appreciates the wonderfully “rustic” nature they add (I think she maybe just doesn’t have a cherry pitter? Because I tried pitting cherries without a cherry pitter…dude, it was not fun.). It was a sweet idea, but didn’t go well for us while we were eating.

We’d like to try it again sometime with pitted cherries and maybe a couple other tweaks. Will post an update if we do!
